Religion is very important for finding records/tracing families.
If he married in a Catholic ceremony then there might be a baptism entry in the church register (possibly even on the same day as the marriage) but difficult to find without knowing where they might have gotten married.
Presbyterian parents may have baptised a child anything from right after birth on up. Sometimes several children of various ages in the family were baptised at the one time. However, it's not uncommon for baptisms to be unrecorded (probably due to the fact that ministers didn't always write down evens in church records right away).
Away sorting out DNA matches... I may be gone for some time many years!

Thank you very much for your help. Hopefully I will find some sort of record for him.
He joined the Royal Artillery in 1847, so I'd guess the marriage is after that. I also think the marriage would've taken place in Dublin, as I'm sure that's where his wife is from.

The only thing that's niggling me is he's noted as being in the Royal Artillery, rather than the Royal Irish Artillery, so I'm not sure if that means he's not actually Irish, as the record if British Army.

Ireland was British at the time. Lots of possible Catholic churches in Dublin but you could start with the one where Hugh was baptised...

However, I had another look at those 3 baptisms-
Hugh's (1853) in Rathmines R.C.
William's in Portobello Barracks (COI not RC)
Thomas' also Portobello Barracks COI

Possibly this is your David Lees witness at a marriage in 1857 at St. Peter's COI (groom's address Portobello Barracks)- see here
Makes me wonder if David was Church of Ireland rather than Presbyterian

Of course it would- entirely different denominations. You can use the PRONI Guide to Church Records to see what COI records for Ahoghill they hold copies of (bear in mind that many pre-1870s COI registers were destroyed after being sent for safekeeping in Dublin).
