Zadok Roper was born in Castle Donington to Timothy and Hannah Roper.
Baptised 11 May 1851 Castle Donington.
On the 1861 census he is with his mother who claims to be a widow( not sure as I can't find Timothy dying) aged 10yrs St Anne Lane Castle Donington Leicestershire
1891 aged 39yrs in St Nicholas Lincolnshire occupation Sergeant Infantry and married ( likely to Elizabeth born Ireland)

I can't find anything else about him despite his more unusual name.

Any help appreciated.

There is a Zadok Roper on the 1901 Irish census age 50 born England with a wife, Lillie, dau, Lizzie age 14 and a servant. Wife and daughter born Buttevant/Buttervant.

Would this fit?

I can also see an Irish marriage to either Elizabeth Saunders or Elizabeth M'Affee S1884

Forgot to say I've only seen a transcription of the 1901 census and it could be Lizzie rather than Lillie on the original - after all the transcription has 2 different spellings for Buttevant.

And a death in Mallow, Ireland J1902. I don't know where it is possible to see the original 1901 census as that could be useful as it might have more clues, such as occupation. But of course he could have left the Army.

I've looked for daughter Lizzie in 1891 to see if she was perhaps with grandparents but can't find her.

So he is on as a publican 50yrs CofE , 'Lillie' is half his age 25yr with a daughter Lizzie 14yrs both Catholics. So maybe wife number 2 or I am wrong about wife no.1 Elizabeth in 1891 in Lincoln

Maybe this is wife in 1911 a widow living with her brother http://www.census.nationalarchives.ie/pages/1911/Cork/Buttevant/Buttevant_Town/427994/
and that fits  "Saunders" as a maiden name

No - 1891 image clearly shows her as Elizabeth aged 27 born Ireland
