Looking for information on Murdoch Matheson and Chelsea Pensioner.

Murdoch Matheson born about 1813, Lochalsh Ross Shire. Lived and died in Inverness in 1867. He is on the 1851 and -61 census with his family. Looking for information on sons, George Dougal and Angus.

1861 has no son George.  Sons are Dugald aged 7 and Angus  5.  Also a son Duncan aged 17

Have you looked for them on the various censuses?  Have you checked for marriages on Scotlands People

Could the mother of Dugald & Angus have been a 2nd marriage as there's quite a gap between the siblings?

Anne: I was given a phone number to call the Inverness Crematorium, I wonder if that would reveal anything?
As far as burial is concerned, you could try phoning Inverness Crematorium (01463-717849) who keep records for Tomnahurich Cemetery which was the main cemetery at that time. They have lair records from 1864 (for private graves top of the hill).

That just might explain why I couldn't find baptisms in my searches although I couldn't find Angus born in Inverness, Inverness-shire either
