Bake house in Kilbarchan

Hi
just wondering if anyone would have an information about the Bake house/Bakery at 17 Church Street Kilbarchan owned for many years by John Hill Master Baker.  According to the Scottish Post Office Directory it seems to have stayed in the family from the 1871 Census until at least 1911 although I am not sure who the John Hill is who took over the business between 1909-11.  I have a fairly good grasp of the family and their births, deaths and marriages through census records, wills and valuation rolls which indicate John was the owner of 11-17 Church Street.  I am really interested in history of the bake house (if there is one) and what this would have provided the community and the importance of being a Master Baker to family income.
Any thoughts would be gratefully appreciated (off to take my banana muffins out of the oven before they over cook!!)
