If you're not certain of your Samuel's birth, do you have him on any census records from 1851? This Might give children's birth places and possibly his wife's name, as you said he was 'possibly' married to a Susanna?
What do you know for certain that we can work backwards from?
Jamiesons, Martins and McGonigals of Coleraine, Londonderry
and
Cullens, Grahams and Challenors of Dublin county and city.

So James is a definite ... do you have him on census records to confirm the c1821 halstead birth? What makes you certain that this baptism is your James?

There's a Samuel Pudney, age 50, widower,visiting a George Wiffen and wife Hannah on the 1851 Census.

There's a 30 year old Samuel Pudney with James and Eph(r)aim on the 1841 Census.

There were baptisms of an Ephraim Pudney in 1823 and 1826 - parents Samuel and Susanna.

There's an 1823 death for an Ephraim Pudney.

Samuel Pudney is on the 1881 census living in Friars Street Sudbury with granddaughter Caroline Allison and her family. The census states that Samuel was born 1800 at Greenstead Green.
Most folk in Greenstead Green born pre circa 1840 seem to have used St Andrew Halstead for their baptisms. Samuel died in 1883 in Sudbury. Caroline appears to be the daughter of the aforementioned Ephraim.

1841 Census on the same page as Samuel/James/Ephraim is a JOHN Pudney age 80 (1761)
Mary Pudney age 40 in Household + Keziah Goodey and child

John Pudney was buried 17 Oct 1841 age 81**
