Hi again, I do not know if you have the 1881 census for William/Sarah and family, but looking at the original they are the only family written "backwards" on the page, it includes a Grandson Alfred aged 1 if indeed Alfred is the son of William J b 1862/3?

Sellar Williams 60 b North Petherton
Sarah 57 b Moorland
Jane 27
James 24
William 19
Charles 15
Alfred 1 Grandson
William Rees 75 Lodger/Widower
All others b Bridgwater
Residing at Barclay Street, Bridgwater
Census ref RG11/2375/104/19

EDIT I believe the Alfred shown as Grandson and with Hannah in 1891 census is the illegitimate son of Sarah Ann Sellar b c 1860 ( The sister of William b 1862)

Baptism 9th January 1880 St John, Bridgwater

Alfred Sellar Mother Sarah Ann residence Barclay Street

Sarah Ann could be the Sarah Sellers 21 b Bridgwater occ Inmate in Bridgwater Union Workhouse in 1881.
