Why is the wife not named? It's just two dashes?

The census enumerator would copy whatever the householder had filled in on their form.

Interesting...could that be why some ages are slightly wrong?

On this census she is aged 65... but on the last census she is aged 57

And the census before that she is 44

Those ages are not that different. 

They would not have had birth certificates, to refer to as they were born before 1837.  Age was not important as it is now with no state pensions etc.
