To be 100% clear is it appropriate to say that Eva Maria (Mary) Rübmann nee Stenner married secondly Johann Peter Schuhkraft?

Thats just fantastic news that there are still Rübmanns and Stenners  living in Öhringen.

A query.

Swissgirl noted from an ancestry record that George's father is given as Johann Peter Schuhkraft born 1801 and his wife Eva Maria (Mary) Rübmann (Stenner) born 1805.

We then suggested that the 2 surnames for Eva Maria indicated her maiden name was Steener and that her marriage to George's father Peter was her second marriage give the surname of Ruebmann.

However the Familysearch record kindly supplied by Ian at https://www.familysearch.org/ark:/61903/1:1:VCBB-T3G gives Eva Maria's parents as:

Spouse's Father's Name   Johann Georg Ruebmann
Spouse's Mother's Name   Eva Rosina Magdalena Schmidt

Is it a coincidence that Eva Maria's father is a Ruebmann and she happened to marry a Ruebmann meaning her first marriage she did not in effect change her surname?

Or are there issues with the ancestry tree  Swissgirl located?

Just noticed that this is a death record. I admit that I missed this first time round (don't know how though). So your Johann George could be another son to them with the same name.
