USB stick help, please

Say I "send" all the files in my Documents folder onto a USB and then a few days later want to "send" the files I've worked on since or any new files I've made.  How do I do that, please?

I've tried Send, but it makes a copy directory of Documents, rather than overwriting the existing directory and adding the new/amended files there.

The way I do it is:

Open the Documents folder, and list the files by date.
Open the USB drive in another Windows Explorer window, and sort them by date.

Highlight the files in the Documents folder that are new or have changed, and drag them to the USB folder.
Garrad (Suffolk, Essex, Somerset), Crocker (Somerset), Vanstone (Devon, Jersey), Sims (Wiltshire), Bridger (Kent)
