Could be that father John was a name she made up.  Really need the marriage for more information to go on.

If Ellen can't be found with a father John are there any Ellen Kilshaw's with a Kilshaw mother in 1861/1871 in case her mother was unmarried  :-\

Have you thought that since she was older than her husband she might have knocked a year or two off her age?
There is an Ellen aged 4 with parents John and Ann on the 1851 census, although it's true that they are in Chorley lodging with Ann's parents, the Blacklidges.
Still there in 1861 though John Kilshaw has died.

Mary Ellen Kelshaw

father John
mother Elizabeth

The Simcock Street address on this baptism (and occupation of father John as a smith) ties her to the "Mary" Kelshaw who is aged 3 in Simcock St, Toxteth Park (West Derby RD) in the 1851 census, daughter of John (a smith) and Elizabeth: HO107/2188/379/11.

She's traceable in the family in Liverpool up to 1871.  Probable birth reg is as Mary Ellen Kelshaw (mmn Williams), Sep qtr 1847 West Derby.
