I am way out of my semi comfort zone. Can anyone advise me where such national records are to be found?

Online at https://www.scotlandspeople.gov.uk/  which is a pay per view site - 40 credits cost £10 and each full image costs 6 credits to download. (searching the index is free after you have registered)
There is a privacy limit of 100years for births 75 years for marriages & 50 years for deaths.

If you are in a position to visit any one of the centres you can view many more documents for £15 per day (booking usually required)

Hi Toby,

The site you are looking for is   www.scotlandspeople.gov.uk

You register for free and then buy blocks of credits to view an entry. 30 credits costs £7.50 or 40 credits for £10.00. Each entry uses 6 credits. Pretty cheap at the price.

If its Birth, Death, Marriages you need then they are available as follows -

Births over 100 years, Marriages over 75 years and Deaths over 50 years are all available online at this site. Anything outwith this period have to be purchased at £12.00 each.

As you have put this on the Ayrshire board, you might find this site interesting too:

Also familysearch.com have a lot of Scottish records - transcribed, but once you have found the BMD you're looking for, you can view the film of the parish -- for free! (Sometimes at home, or otherwise at a Latter Day Saints library). This is more helpful once you get back beyond 1855 - the date of civil registration in Scotland.
