I have an ancestor by the name of Irene Morgan (maiden name was Horner) who passed away in 1994 and always lived in York.  Why would the probate be in Newcastle please?  Thank you.

Maybe that is where the nearest probate office was to the executor  :-\

I have a relation who died in Bristol but the nearest office to the executor was London

There aren't probate registry offices in every town, so as Rosie said it was dealt with in the one nearest to the executor or solicitor dealing with the estate.

"You will have to go for an interview at a probate registry when you have sent in the forms, so return the forms to the probate registry where you would like to go for the interview. "

Not quite correct, there are usually places local to you where you can go for you interview and to take the oath. When you apply to the appropriate Probate Registry for the forms, they will tell you where you can go. I live  in Christchurch, Dorset, and  I dealt with Probate through the Winchester Registry in Hampshire, but was able to go to an office at Bournemouth Crown Court for my interview.
