Martin Dunphy Birth Kilkenny 1800

Hi
My ancestor Martin Dunphy was born, a Roman Catholic , in Kilkenny Ireland in 1800, was transported , to Tasmania Hobart, on 31st August 1836.
His first son was,  Charles Octavius Cassius Dunphy was born in Tasmania on 1849.
I have tried to find Martin Birth records, but to no avail.
I have used Family search, I have used wizard.
Can someone please give me some clues.
Would Martins Father name be, Charles
There was a John Dunphy transported , 1848.
There was a, Thomas Dunphy born about 1831, who got married & had a Family in Tasmania.
I live in Australia , it is a hard to look up Church records in Kilkenny.

What do you have that tells you Martin was born in Ireland?  The place name on the description list is usually the native place.  Martin's is stated as Islington and he was tried at the Old Bailey.

I have his birth place, Kilkenny, through my Mum.
Maybe , he states islington , because he was tried?

RC parish registers are free on line.  Not all start early enough though, and the legibility varies.

"Kilkenny" is a city and also a county.
