Thank you JonW, the baptism looks hopeful but I suppose there is no way to know its him for definite. The Census could be them but again we don't know do we. The Henry on the census surely cannot be my Henry as he is too old.

Hi
No, he can't be your Henry, but might be a brother of William perhaps?

Is your Henry in Ware in 1841, with wife Mary?
https://www.familysearch.org/ark:/61903/1:1:MQY8-443

If Mary was Mary Bingham, then their first child was Henry Thomas Perry, registered Ware, Sep qtr 1841.
And a baptism at Ware, 29 August 1841

I have  more or less researched Henry, its his dad I am trying to find info on. For your information yes Henry did marry Mary Bingham in 1840. I am not convinced about your 1841 census choice. I have them 1851 and 1861 and their eldest son is John on both of these.

Hi
Well we have
Henry Perry married Mary Bingham, 22 July 1840, St Leonard Shoreditch
He was a Groom, father Wm Perry, a Thatcher
Residence for both Waltham Abbey

Looking at the new GRO birth index which gives the mother's maiden surnames back to 1837 (available on their website)
Sep 1841 Ware vol 6 page 550
Perry, Henry Thomas
mother Bingham

There's a baptism of Henry Thomas Perry in Ware, 29 August 1841
Parents Henry and Mary. Abode Ware.
Father a Mealman.
Which ties in with the 1841 census entry in Ware, although this occupation is different to the marriage record!

Then a burial in Ware, just two weeks later
13 September 1841
Henry Thomas Perry, Inft

No more baptisms in Ware to Henry + Mary
The next three Perry birth registrations, mother Bingham, are all males in Edmonton district (covers Waltham Abbey) and you are aware of all that.

Interesting that on John's baptism in 1843, father Henry has changed occupation again. He's a Farmer

Back to William and Mary, the possible parents of Henry.
Well, in 1851 they seem to be both still alive, and still at Holyfield.
piece 1704 folio 82 page 14
Waltham Holy Cross, hamlet of Holyfield
William Perry Head 74 Hay binder, born Essex Waltham Holy Cross
Mary Pery Wife 72 Essex Roydon
Emma Perry Visitor 10 Scholar Essex Waltham Holy Cross
Charles Perry Visitor 8 Scholar Essex Waltham Holy Cross

Also in the house Edward Perry, 34, Hay binder, and wife Sarah
Next dwelling is Thomas Perry, 40, Hay binder, wife Ann, and family

So William's occupation in 1851 is good, remembering what it said on Henry's marriage cert.
Although the transcription on FamilySearch has it as Stag Binder!

WOW! jonw65 you are awesome, please can I move in with you and get some lessons?  A lot to take in and sort through but :
1 I did not know the GRO now did that type of search.... thank you.
2. For your info these 'Perry's' change their jobs like we change our clothes, very inconsiderate I say!
3. I believe your 1851 census ties in nicely with the family found on 1841. Looking at the neighbours I think probably what your thinking they are sons.
I really appreciate your help thank you. I will no doubt be back with more questions
