Can anyone tell me what court Wills and other probate records for people who lived in the parishes of Hackney and Holborn (St Andrew) would have been proved in during the 17th century?

There are several possibilities for each. You may want to read the standard LMA Research Guide on Wills for London, Middlesex & Surrey before 1858.

For those wills held at LMA, Ancestry's database London, England, Wills and Probate, 1507-1858 covers these courts ...

    DL/C: Consistory Court of London
    MS 9172 and DL/C/B: Commissary Court of London
    MS 09052 and DL/AL/C: Archdeaconry Court of London
    DL/AM: Archdeaconry Court of Middlesex
    MS 25628 and CLC/313/K: Peculiar Court of the Dean and Chapter of St Paulís
    DW/PA: Archdeaconry Court of Surrey
    DW/PC: Commissary Court of Bishop of Winchester

But the above dataset only includes the original wills that have survived for each court, not the register copies, and it does not include any grants of administration.
