....sister Katie, Chicago........sounds like a very casual record for NOK?

I think you need to check the document you are using.
Details on Michael Sheehans enlistment record 5th Jan 1899 Tralee Kerry
NOK Sister Katie, E James Avenue Chicago USA & Rebecca Coughlan whom he married 6th Nov 1913

This might be Mary Cotter who reported the deaths of Kate and Hanora.

Great find Heywood certainly seems likely that Mary Cotter (previously Lawton) present at deaths was related to mother Kate Lawton (Sheehan) & maybe took in the children after mothers death :)

I have looked there but couldn’t see her. I hope you find her.

This looks like Thomas Cotter in 1911
http://www.census.nationalarchives.ie/pages/1911/Cork/Carrigtohill/Carrigane/434998/

Son Michael born in America

Possible marriage for Michael
https://civilrecords.irishgenealogy.ie/churchrecords/images/marriage_returns/marriages_1913/09892/5594301.pdf
With a Lawton witness.

It might be getting too complicated now. :-\

A Catherine Sheehan, father John barman deceased married in 1887 to Thomas Murnane
https://civilrecords.irishgenealogy.ie/churchrecords/images/marriage_returns/marriages_1887/10797/5937506.pdf

Could it be her?

She'd have to be fibbing about her age if she is your Kate.
