The 1871 has a dau Mary Ann born about 1858.  I don't see a birth registration in Sheffield for her.  She could be Sarah's dau, but not William's.

Try following these up as it's possible Sarah was married previously.

MIDDLETON, MARY  ANN, mother's maiden name WALES      
GRO Reference: 1859  M Quarter in SHEFFIELD  Volume 09C  Page 306

The 1861 census Sheffield has a Geo 23, and Sarah Middleton 20, with children Mary Ann 2 and Jas 1 month ( RG 9; Piece: 3500; Folio: 112; Page: 13)

And a possible marriage: Jan 30th 1859, Parish Church Sheffield, George Hattersley Middleton 21,
Sarah Ann Wales 19, Eyre Lane, father William.

The above scenario is looking rather likely as I see in 1881 there's a Mary Ann Middleton born 1859 with the Charlesworth family.  Also Mary Ann's son Samuel age3.

Mary Ann Middleton and her son Samuel born 1878 are with a Shaw family in 1891.  Sam is entered as Samuel Shaw Middleton.

1901 has: Samuel Shaw 1858, Mary Ann Shaw (wife) 1859. Samuel Shaw son 1879, Harriet Charlesworth visitor 1876.  Living Sheffield,

Marriages Dec 1891, Sheffield, 9c 885.  Samuel Shaw and Mary Ann Middleton

Now I'm trying to find William's family. I can't seem to find a likely candidate on the 1841 census.
