Sorry for the delay in replying, but I've looked at the Henstridge baptism and it appears to be the same couple, judging by their names. It looks to read:
1801....
Oct (?) 18 John son of Giles & Elizabeth Serjent
although the page is not easy to read in places. Sadly for you, a new clerk/parson started entering baptisms in 1802 (until 1812) which are the most complete I've ever seen - full names of parents with father's occupation and abode AND names of grandparents with grandfather's occupation and abode (in most cases).
To answer your query Henstridge is not particularly close to Wells - it is in the south of the county, on the Dorset border. I couldn't see any other Sergeants in the register around that period.
