OP also says that in 1861 the family were living in Garthorpe - RG9/2304 folio 96, page 12

William Caunt - 27
Elizabeth - 33
John - 8
Samuel - 5
William - 3
Mary Ann - 10 months

So a marriage in 1863 is also a little suspect  :-\  Where does the exact date come from?
Transcriptions and NBI are merely finding aids.  They are NOT a substitute for original record entries.

I think it would be better to take a step back and ask which of the children Of William and Elizabeth are of the correct line. To me there seems to be a couple of William's knocking about in that timeframe.

As I said before, I saw the date on various family trees.  I am going by the birth and census in Garthorpe.  Eliza born Shillington c1828.  Confusing.

Thanks

Julie

And as before, we are asking who is the initial target person that led to this census?

Didn't you check it on freebmd etc?  Given that you say you have them on the 1861 census - an 1863 marriage makes little sense unless it is a second marriage

William's wife in 1861 is Elizabeth, not Eliza and as birth entries on GRO index show her maiden name was Griffin or Griffen (also in 1851).

As already mentioned, William Caunt and Elizabeth Griffin married 1846 Shillington.

His age is wrong on 1861 census - shows him as 27 but 1851 census also shows him (with Elizabeth) as 27.

His baptism is actually 3/12/1822 Garthorpe, son of William and Charlotte.
