Same Coat of Arms different Crests

We think we link back to the Hildesley family of Berkshire, uk.   William Hildesley is detailed as having a coat of arms in Visitations and his son George of Brympton on the next page has the same one.   His other sons Edward (the Eldest) of Crowmarsh Gifford and John of Aldermaston are also detailed.

The Crowmarsh Gifford Hildesley had a Griffin as a Crest (don't know the heraldic terms)

Subsequently, we have heard from a descendant of an american branch of the Ilsley family whose grandmother had a Coat of Arms and Crest on View.  We are fortunate enough to be in receipt of a high res photo of this coat of arms and crest see attached.

The question is this:  Who commissioned the Ilsley Illsley Coat of Arms (attached) and when?  They are detailed in Burkes Peerage under Ilsley Illsley.   We think it would most likely be an american Ilsley who first settled in Newbury MA c.1630.   They were successful farmers.  Is the inclusion of a rooster likely to indicate farming?

The Hildesley Arms (as detailed in the Visitation) are not the same as the Illsley Arms you attached, although very similar!

The Hildesley arms contain bars-gemels - pairs of thin bars.
The Illsley arms you attached contains bars.

However the Illsley arms on the Berkshire History website ARE the same as Hildesley.

Changes in the crest are used to distinguish different branches of the same family.
The crests weren't considered to be that important; e.g. the heralds didn't mention any crests in their Visitation.

Burkes's General Armory says:

Hildesley (Cromers Gifford; William Hildesley, grandson of William Hildesley, Esq., of Benam, co. Berks; descended from William Hildesley, living at Byneham, 50 Edward III., 1375. Visit. Oxon, 1566). Or, two bars gemelles sa. in chief three pellets. Crest—On a mural crown a griffin's head betw. two wings expanded ar.

Ilsley (llsley, co. Berks). Or, two bars gemels sa. in chief three pellets.
Ilsley, or Illsley. Same Arms. Crest—Betw. two serpents disposed orleways, tails in saltire, a cock ppr.

Is there any way of getting information about to whom and when the Ilsley entry in Burkes relates to?  I can see that the Hildesley entry has information concerning William Hildesley et al?

NB/I notice that there is a discrepancy between the Burkes two descriptions of the coat of arms (which are identical) and the artistic interpretations (which as you pointed out are not).   Is that likely because the person who drew the picture of the Ilsley coat of arms and crest was not actually a trained expert in the matters of heraldry?

The best way of finding out is to contact the College of Arms - but they are very likely to charge, and it won't be cheap!

Please note that the Officer In Waiting is whichever Herald or Pursuivant is on duty?
They do a week at a time, each.

The heralds and pursuivants take it in turn, a week at a time, to be the officer on duty who deals with all letters, faxes, emails, and telephone calls addressed generally to the College. The Officer in Waiting, as he is termed, also sees those who make enquiries in person. He advises on whether he would be able to assist in a particular heraldic or genealogical problem, what research he would recommend and what fee would be payable for it. He will also arrange for the examination and recording in the College registers of pedigrees; and for the preparation under his supervision of a range of heraldic artwork.
