According to FreeReg and FamilySearch,

09 May 1715, Gwinear, Thomas MITCHELL m Jane (surname not recorded)

Can anyone help with the bride's surname, please? Is it likely to have been the same as the groom's?

if it has been transcribed that way it's because no surname was recorded in the register, so no way of telling from that.

He would appear to outlive her as burial in 1757 says wife of Thomas. So possibly the burial in 1759 which would tie in with the will for Thomas Michell, yeoman of Gwinear from 1759 ref AP/M/2560 in the holdings of the Cornwall Record Office. You could try getting a copy from them to see if there's mention of in-laws.

I had hoped that, as the marriage details were taken from Phillimore's Transcripts, the Parish Register might have the missing surname.

it's not on the OPC database or FamilySearch or the transcript of Boyd's Index. I've seen registers from that period that don't record the surnames of women marrying. Annoying but not unusual.

I thought I'd see how many baptisms of a 'Jane' took place in Gwinear in the 1690's to see if I could eliminate any of them. Unfortunately, there were 4 from 1690 to 1694, and I could not find a marriage for any of them.

I should also have looked for burials. I shall do that.

Having looked at burials, I can only eliminate, fairly reliably, one of the Janes viz Jane KNEEBONE whom I believe was bap 18 Jul 1691 and buried 20 Mar 1700.

she could have been baptised in a neighbouring parish. Also, check for jennifers as the names were variants.

Have you checked if all registers for that period and area have survived and have been transcribed?
