I can't find the 1871 entry you mention but in 1881 he is 84 so born 1796/97

Found the 1871 entry - he is shown as born 1802 Leeds and is married to Mary aged 47 b Sythney Cornwall

Where did you get a birthyear of 1810 as neither 1871 or 1881 entries support that birthyear

Where did you get his middle name of Hart from?

Just for clarity
Elizabeth Ann's birth registration is in the surname of Pope - mmn so she may or may not be the daughter of William Hardcastle.
Elizabeth Ann Pope Helston reg district June 1/4 1866 vol 5c page 266
This registration matches with Elizabeth's age of 6 on the 1871 census.
William and Mary's marriage is registered in the Sept 1/4 in Truro reg dist.

Welcome to rootschat, Frances.

If you buy his marriage certificate it should have details on his father, which should narrow the search for him.  It should also state whether he had been previously married.

Just putting this from 1861 census, as closer to the 1810c birth/age, and born in York according to 1881 census

William Hardcastle  age 48  (1812/3) born York, Yorkshire
living in Redruth, Cornwall
William Hardcastle   48  lodging house keeper, labourer
Mary Hardcastle   49   wife  Wendron, Cornwall
......
Class: RG 9; Piece: 1579; Folio: 91; Page: 38;

Added:
This could be that Mary's death
Mary Hardcastle age 53 in Liskeard in 1865  (so that he could then marry in 1866).

Do you believe that this is his death, to give that birth year around 1810?

Deaths March quarter  1884
William Hardcastle age 74 in  Plymouth ( 5b   202)

Is this Mary's death (age different from 1871 census when they are living in Holsworthy))

Deaths June quarter 1872
Mary Hardcastle age 52 in Bideford

I am assuming this is a post of yours from Ancestry:

' William died in Plymouth 1884 and on his death certificate it states formally stonemason as occupation,'
