Here's my take on the first part:

and have a chat, dad is allways angry on
my birthday because he has nothing to give
me.  I told him he's had his blessing &
he was quite disgusted  at all
events he brought home a bottle of Wine
but did not take of it himself

My attempt at a follow-on from Greensleeves' part.

Be careful with Martha dear do not rush anything her confinement nearly cost her her life and the Dr. doesn't think she can have any more so for your mother's sake for God sake be careful  her husband would (....?) to the death every one hurting her.

Rhodedendron, I think it is "hunt to the death"

My contribution:
Everyone loves Mother baby what do you do with ** Gill all day if left alone I am afraid he will get into trouble.  Send my love to dear old  Janet and Nelly when you see her, you are sure to sleepwell when you have enough to eat.  Harriet **

This is my best shot at it, but I have guessed a few things from the context.

....and have a chat.  Dad is always angry on my birthday because he has nothing to give me.  I told him he had his blessing.  Oh he was quite disgusted.  .. ??..  At all events he brought home a bottle of wine? but did not take of it himself.

Be careful with Martha? dear do not risk anything her confinement nearly cost her her life and the Dr doesn’t think she can have any more so for your Mother’s sake for God sake be careful her husband would hunt to the death anyone hurting her.  Everyone loves Martha’s baby.  What do you do with poor Gill all day if left alone.  I am afraid he will get into trouble .  Give my love to dear old Janet? and Nelly when you see her.  You are sure to sleep well when you have enought to eat.  Harriet’s?  ??? ....

....laugh.  Mrs More? is dead  ??? the timber? merchant’s wife.

Mr Pascoe fell into the water? in a fit and died.

???   Simmons? died of pleurisy? the one that married ??? Richard’s ??? ??? that married ??? ??? is back and living with his mother in law both.

This is a little disconnected.  But I am fully old and just write? anything.
