Which Matthews are you completely sure about - you have birth, marriage, death, census information that all match up, please?

If Joseph was their son - he should be with them in 1871

In 1871 - The only William Matthews b Battle was 21yrs old unmarried and living with his mother

In 1871 - Mary Holman aged 20 b Hellingly  is unmarried, childless and living with her mother Sarah

Richard is your greatgrandfather and disappears in Canada - this is his birth, from GRO:

Richard Matthews mmn Holman    
GRO Reference: 1893  March quarter Quarter in Hastings

confirming his Mother's maiden surname was Holman
