Since Emily married Leonard Sage with her maiden name, and that there is no likely marriage between her and a William Audley I agree in that Gladys was almost certainly illegitimate.   However, when Emily had her daughter baptised she clearly was passing herself off as a married woman.   Since there appears to be no William Audley (from census records) living in the Kent area around this time I suspect that said William Audley was possibly an army or navy man based for some time in the area.   Only the birth or baptism certificate will state his occupation to hopefully enable you to identify which William Audley he was.

Hi All,

I have just obtained some more information and Annette7 is correct William Audley was a soldier.

The commplete information I have is as follows:

Gladys Winifred Audley was baptised 7th February 1904 at St Bartholomew's Church, Charlton in Dover.
Her Father was William Audley occupation soldier
Mother Emily Elizabeth Audley formerly French (although I doubt that they were married)
The address recorded is 82 Wyndham Road

Can anybody advise how I find out information about Soldiers who were in Dover in 1903/04 and who was living at 82 Wyndham Road Dover in the 1901 census

Birth - Mar qtr 1904 Dover vol 2a p1121 AUDLEY, Gladys Winifred, mmn FRENCH

ADDED:
I haven't yet found which line regiments were in Dover, but the Royal Garrison Artillery were definitely there.  According to Wiki this was likely to be the 1st Kent Brigade RGA (volunteers) formerly the 1st Kent Artillery Volunteer Corps.

An unproved source, supposedly transcribed from the Army and Navy Gazette 1904 lists the following Army units in Dover:
Army Service Corps (46th coy)
East Kent Regiment (3rd bn)
Royal Garrison Artillery (35th coy)
Royal Garrison Artillery (40th coy)
Royal Garrison Artillery (41st coy)
Royal Garrison Artillery (107th coy)
Royal Lancaster Regiment (1st bn)

If William AUDLEY served in WW1 (either still in the regular army or recalled from the Reserves) the Medal Index Cards

have eight possibles, with two in the Royal Garrison Artillery.  It could be worth checking to see if their service records have survived.
