You need to follow the advice and purchase the birth certificate of one of the post 1856 children.
This one perhaps.

Henry Hinson who was the twin brother of my 4x great-grandmother, Sophia Hinson (later Pepper).

1841 Census (HO107  86  16  15  25)
Address - Hobson Street, Holy Trinity, Cambridge

Henery Pepper, age 15 (born 1822-1826), tailor, not born in County
Sophia Pepper, age 20, (born 1817-1821), born Cambridgeshire

Did your Sophia marry an "'Enery"?

Yep, in 1841, in Northampton, shortly after the census. Father William Pepper, labourer and John Hinson, a tailor. My ancestor was their son John Hinson Pepper - presumably named after Henry and Sophia's father, John Hinson. Henry was born in Lidlington, Bedfordshire, in 1823. Sophia died in Cambridge in 1855, and Henry died there in 1887.
Lipman family of Aldgate - ends with Lewis Lipman (d. 1871, Bethnal Green), son of John Lipman 'late of Glasgow' (1856)
McGregor family of Fodderty - ends with Alexander McGregor (b. 1765, Fodderty), son of Murdoch McGregor and Kate Stewart

There is no indication of how they know his wife was Irish,

Perhaps the person has sighted one of their children's birth certificate which would detail the parents' places of birth and ages at time of registration.

Others have suggested you follow this line of research.

That was on the Ancestry chat. He was a linen draper, and the one who died in 1856.
