Just to clarify what you are actually looking for, is this the correct sequence of events?
Catherine Russell born about 1847 in Carnwath
Peter McGhie married Catherine Russell in 1866 in West Calder
Agnes McGhie born 30 August 1866 in Whitburn
Peter McGhie born 20 March 1868  in Carnwath
George Russell McGhie born 30 July 1871 in Kirknewton and East Calder
John McGhie born in Carnwath about 1875
Peter McGhie died in 1875 in Liberton
Catherine Russell or McGhie married Peter Morton in 1882 in Kirknewton and East Calder
Catherine Russell or McGhie or Morton died in 1920 in Kirknewton and East Calder aged 73

The first thing to know is where the family made their homes, because the usual thing was to be buried in the kirkyard of the parish where you lived.

There are kirkyards in all these parishes
Kirknewton https://www.geograph.org.uk/search.php?i=85361466
East Calder https://www.geograph.org.uk/search.php?i=85361488
Liberton https://www.geograph.org.uk/search.php?i=85361028
Carnwath https://www.geograph.org.uk/search.php?i=85361433
Whitburn https://www.geograph.org.uk/search.php?i=85361522
West Calder https://www.geograph.org.uk/search.php?i=85361600

Have you seen Peter McGhie's death certificate, which will tell you his usual residence? You can then concentrate your search on the parish kirkyard there.

After a widowhood and second marriage, Catherine was probably buried with her second husband. So you need to see from her death certificate where her usual residence was, and you need to find Peter Morton's death to see if he died before or after her and where his normal residence was.

For her second husband, I would look at the 1931 West Calder death.

They did in the 1850s but this detail was dropped about 1860. Probably because you needed the death certificate first so that you could arrange the funeral.
