I'd appreciate a translation of the part of this 1778 marriage document from Ille Bourbon which starts Et de Marie Anne Margueritte Tessier...

Unlike her husband (fils legitime...) it does not appear to mention the names of her parents. Does it say that she was a widow of S Guibou of Coupaliar (Courpalays?) an employee of the king?

For reference she is reffered to as Marie Anne Margueitte Tessier veuve Courpalays (which I translated as widow of Courpalays) at the baptism of their illegitimate daughter some six months before the marriage.

Yes, I believe it says "widow of the deceased S Guibert Courpalais..."
