I am looking for George C Austins dad, he was a master merchant in 1861 whilst his family lived in Shoreham. However, I can't find his first name, i think he was born around 1820. Any help please.

What was the wife's name and age? Can you give some more info i.e. George' C Austin's age? Was it Shoreham in Kent or New Shoreham in Sussex?

Shame he isn't at home in either 1851, 1861 or 1871!
However, I can see a possible candidate. The 1871 census (RG10/1089 79 8 ) shows a daughter Emma age 9 born New Shoreham.
Tracing her forward to 1881, we have:
RG11/1102 9 9
St Mary's Sussex
Emma Austin, dau, 18, Housekeeper to Father, b. Shoreham
Thomas, head, wid, 59, Master Mariner, b. do.
Harriett A, granddau, 11, scholar, b. do.

Thos Austin, mar, 40, Master, b. Shoreham Sussex

I'm not quick enough today, so will leave you to it, but the vessel Thomas was Master of was the 'Brenda' of Shoreham, a 167 ton Coasting Brig, at sea

Would it be possible that the wife's death was registered in Steyning, about 2 miles away from shoreham. There is a death of Sarah Austin in 1976, and if she was born in 1820 which i think is right, it should be her. Shouldn't it?

Quite likely, daughter Sarah Ann's birth registration looks like 1843 March Qu Steyning 7 45_ and Steyning registration district covers New Shoreham
If you want to buy the death cert, best to check with the local register office for any known details first. They should do that free provided you are going to buy the cert, or you can check details with the GRO if ordering from them - £3 charge included in the price if it's the right person.
