LDS FamilySeach now carries indexes for all censuses 1841-1911, with links to FindMyPast. The indexes are free to search.
1851 Census
Hampshire Genealogical Society have produced an index of this census in book/fiche form – it runs to to 67 volumes. Some of the books are now out of print and the volume is available on fiche only. Please note stock is now limited. See the society’s publication list here:

1861 Census
The FreeCen Project (http://freecen.rootsweb.com/) has transcribed approximately 54% of the county.
1891 Census
Index of 1891 Census for Hampshire (excluding the Isle of Wight) has been published on CD-Rom by Hampshire Genealogical Society:
