Hi.
I want to determine the maiden name of Eliza/Betty, b. abt. 1785, married to John Waddington, b. abt. 1790, coppersmith, of Little London. They appear on the 1841 and 1851 census records. Eliza/Betty was 67 in 1851.
Will a death record for 1855-1865 show her maiden name? Below are my choice of death records - in case you could direct me to another source that would reveal her maiden name.

In answer to your question a maiden name wouldn't be shown on a death record in England, the informant maybe a family member.
The only way would be if a child was born after 1837 and the mother's maiden name would show on a birth registration unless a child is illegitimate then it's left blank from searching GRO indexes https://www.gro.gov.uk/gro/content/certificates/login.asp
The death entries you have shown can be ordered as a digital image from GRO indexes which cost £2.50

Yes, the John Waddington, mason/stone cutter, on Sarah's 1814 baptism is my person of interest. I want to confirm his wife's maiden name was Grange, thereby confirming the 6 Sep 1813 marriage is theirs and not for the John and Eliza/Betty Waddington who remained in Leeds.
My couple of interest immigrated to New York City in about 1820. When their youngest daughter died in Manhattan in 1910, she listed her mother's maiden name as Grange.
I want to rule out the possibility that the maiden name of Eliza/Betty Waddington living in Leeds in 1841 & 1851 was Grange.

It looks as though you have taken these from FreeBMD. If you go to the GRO site (as given by Ladyhawk), the entries also have an age at death, which would enable you to eliminate the second and third in your list. I couldn't find the fourth one, unfortunately.

To expand on this and the latest posts from Ladyhawk, Yorkshire Burials (invaluable for Leeds area research - free to use but you need to register at https://yorkshireburials.uk/) has the burial of Elizabeth Waddington of Carr Street in 1858 at St Mark's Woodhouse. The entry also links to others buried there, with a photo of the memorial giving several family names. John died in 1853, and then it looks like 3 daughters and one granddaughter. If you haven't already done so, it would be worth searching out the baptisms for these in case they have anything about Elizabeth's maiden name.

Just to add to my previous post, the ones described as daughters on the memorial are:
- Margaret (Stubbs), died 1854 aged 42
- Eliza, died 1902 aged 86
- Frances, died 1906 aged 79
