I know grandparents names Martin and Katie Joyce lived in Newcastle

It is best to start by reading a guide such as

If you would like help with your grandparents, it would be useful to know when and where they were born and died, also if you know Katie's maiden name.
Added:
Do you know if Katie was her full name, or an abbreviation for e.g. Katherine?
Also, do you mean Newcastle-upon-Tyne or Newcastle-under-Lyme or another?

The most accurate way is to start with what you know and work backwrards from that, it may help to get used to the various records to look at your own Marriage certificate (if you are married) and your own birth certificate and any similar certificates your family has for siblings and parents etc.
These certificates show where you were born, married etc. giving clues to where your family lived, in a similar way so will your parents and grandparents. Certificate may also show a parent (or parents) name(s) allowing you to proceed to the next generation.
The 1939 National Registration may also be helpful as will census when you get back to 1911.
It is well worth while to start at the very beginning rather than jumping in with your grandparents because you will know much of the information the certificates will contain and by viewing them you will understand what information is given on the certificates and also what the indexing and ordering system contains and requires.
If you have any certificates it can be very useful to try our the index and order system using the informaton you know to find the correct entry without actually ordering another copy of the certificate.
