Does anyone know why I can't find the birth record of someone who I believe was born in Strabane in 1953? She is not showing up on Ancestry, Findmypast etc.

You need NIDirect
https://www.nidirect.gov.uk/services/go-groni-online
I don't know the years covered.
This link might be better
https://geni.nidirect.gov.uk/

Thanks Sinann1, but I've looked there as well with lots of search variations.

I think you can only search online for births more than 100 years ago
https://www.nidirect.gov.uk/articles/introduction-groni-and-its-records
See the paragraph : " Visit GRONI online "

Thanks Christine 53.
Ancestry and Findmypast both have records from the 1950's but nothing comes up. I know she came to England in the 1970's to be married but nothing comes up in passenger lists.

Are you sure they are not Republic of Ireland births, FamilySearch has these up to 1958

There aren't any passenger lists for travel between Ireland (and Northern Ireland) and England/Scotland/Wales.

Thank you KGarrrad.
I've definitely got the right name and birth date - it is really puzzling.

It shouldn't be puzzling now-
N.I. birth index on GRONI only goes up to 1916 at the moment (births 100 years or more) & births on Irish Genealogy site also stop at 1916
LDS, Ancestry & FindMyPast indexes only go up to 1921 for Northern Ireland Counties
Records were not kept of people travelling between Ireland and the rest of the U.K.
We aren't allowed to post details of living, or possibly living, people so if you aren't sure this person is decased then you'll need to remove her name from your original post.

Thanks aghadowey
