Where/how does the DAVIS/DAVIES name come into it?
(I also see there was another Noah PAYNE birth registered Dudley, Dec Qtr 1852, mms HOLMES but he looks like he may be the one who died in 1853?)

That makes no sense to me whatsoever. If "Noah is his brother", then who is "he"?
Who is it that you wish to locate on which census?

On your list of issue in your signature you have:
Caroline 1848 Australia
Charlotte b 1850. Australia
Do you have definitively have Caroline in Australia at some point - as well as Charlotte?
Also, you have Charlotte b 1850 - yet her birth registration appears to be 1847.
I think:
Olive (5) in 1851 is really Sylvia b 1845
Caroline (3) in 1851 is really Charlotte b 1847
Possibly enumerator's error in reading names on the House Schedule or mis-hearing names spoken.
I also wonder if, in 1861:
Noah was there, but the enumerator has fudged up the copying over of the lists of names & ages to the Enumerator Book - so: Charlotte , who was 13 (nearly 14) has been given Noah's age of 10 (actually 9 nearly 10) - and as a result, his name and her age are missing.
Just a theory….
