It’s all very vague.

How do you know she was Sophia Waters sister if you have no baptism for her showing her parents names?

You need to establish for definite her father was William otherwise you could research the wrong person.  Did she marry in 1841?  If so - who to?

Where has Susannah’s name come from?

Are you taking your info from the 1841 census?  Rebecca 25 and Sophia in the same household as William aged 60?

There is a baptism for a Sophia Waters at All Saints, Mountfield, Sussex on 15 April 1822 daughter of William and Susanna Waters.

There are no baptisms of a Rebecca Waters at all.  The only Rebecca baptised in Mountfield in this time frame was Rebecca Morris bp. 20 July 1817 at All Saints.  Father William Morris mother Susannah Morris.

I suspect a remarriage by Susannah and that Rebecca and Sophia were half sisters perhaps.

Family search has an 1817 marriage of William Waters and Susannah Head at Burwash on 4 April 1817 but can't see the actual entry to check if she was previously married - although I doubt if that would be recorded.

Actually forget that because to fit this scenario a Susannah marriage to a William Morris is needed, just prior to the baptism of Rebecca.

Looks good to me omega.

Herbert age 1 in 1841 is Sophias Son, 1851 she is married to William Kemp.
A Brother Theophilus Waters 1824 Mountfield is with them and her Father William Waters 1778 Mountfield.

So Marriage age looks close for William.

Hi
An oddity
Banns called at Mountfield, 24, 31 May, 7 June 1840
Walter Beney, Bachelor, and Rebecca Waters, Spinster
Both of this Parish

No marriage in Mountfield, but a year later
June 1841 Battle 7 329
Beney, Walter
Waters, Rebecca
(+ 6 others)

1841 census has Rebecca Walters, 25, in Mountfield, as detailed previously
And in Ashburnham in 1841
Walter Beeny 30
Rebeca Beeny 20
Horace Beeny 1
all born county

Later census years, Rebecca Beeny says she was born Mountfield.

Hi
It's such a tight timetable from that  warrant, 1 April 1817, to the mariage by licence, 4 April 1817.
The child could have been born in those few days, but in the circumstances they may have had to delay the wedding a little bit? Although there must have been some pressure from the Burwash overseers.

Personally I think that Morris baptism might be a possibility!
It seems to be a complete one off for those parents, at least in Mountfield. There is a transcription error on FamilySearch with the mother's name, it is definitely Susanna, but it does say Morris. Other than that surname everything else fits.
There were certainly lots of Waters in Mountfield, so if it was a mistake I don't know how it could have happened.

They had more children than that Phil and Emily was born 1844, age 6 in 1851 Census.

1841 Census
John Sothurst   25
Mary Sothurst   35
Lucy Sothurst   9
Amos Sothurst   7
Mary Sothurst   3
Eliza Sothurst   1

1851 Census
John Tolhurst   37
Mary Tolhurst   44 born Sternfield, Sussex
Eliza Tolhurst   11
Emily Tolhurst   6

I cant find a marriage for John to Mary Waters?

Birth Regs GRO Index;

TOLHURST, EMMA, Mothers mn WATTS****
GRO Reference: 1838  J Quarter in TICEHURST UNION  Volume 07  Page 439

TOLHURST,  -  (unnamed female) Mothers mn WATTS ******
GRO Reference: 1844  S Quarter in TICEHURST UNION  Volume 07  Page 464

So I am a bit confused here.

I am also a bit confused with Trees have Emily Elizabeth, with Parents John/Mary Tolhurst arriving in Australia 1858 age 13 ( the record does exist for that arrival)
She arrived with Jesse 36/Etty E 33/William 16)

If the one I listed on 1851 Census is still in Sussex in 1861 how could she have immigrated 1858 and married in Australia 1862?

1861 Census
John Tolhurst 47
Charlotte Tolhurst 48
Emily Tolhurst 16 born Lamberhurst
Possible Marriage reg 1852 to a Charlotte Driver.

So which Tolhurst family are you interested in Phil?

Hi Trish

Family history gets very interesting the further you dig down

I am hoping I will find a Mary tolhurst death about 1851 to 1852
As john seems to have married a charlotte driver 1852

It's possible however that there was never a marriage of john to Mary waters

Mary is a likely relative of my wife's family ( the waters )

Thanks for any help

Regards Phil
