This couple were married in New Zealand on 1st October 1864. I have been unable to find passenger lists of when they came to New Zealand. He was a sailor. thanks for any help.

No passenger lists, from the UK, were kept until 1890.
You need to research the NZ end.

Thankyou for that, I didn't realise that. I got their marriage certificate this end, plus movements here, but couldn't find anything else before marriage, hence my request to you. - thanks.

Assuming that the family is from Cheadle, it appears on the 1851 census but not 1861.
The last child to be baptised there seems to be Thomas on 27th July 1851, son of Thomas and Mary (Berry) of Edgeley, the same as Mary in 1848.
There are some Merchant Seaman records of George Nicholas. One born in Corfu and one in Cephalonia. The last records of either is 1856. The one from Corfu also may have been in the army in army - 1851 the 47th (The Lancashire) Regiment Of Foot.

I found Mary Ellen on Ancestry census 1861.
I wonder if I could find Nicolas on the Merchant Seaman's records, would that be UK. - thankyou.

I can see Mary in 1861 now - transcribed as Mary C.
The seamen's records are British and can be found on Findmypast. Quite a few George Nicholas records over the years, so they may be related.

Just adding a bit more for you.
Nicholas George married Mary Ellen Blackburn 1st October 1864 in New Zealand.
Had five children, 3-male 1868, 1870, 1887 and 2-female 1876, 1878.
Died Stratford New Zealand 5th February 1921 (interesting side note. Death certificate states he was born in Egypt 1833. Family always have said Greece).
Mary Ellen Blackburn died 13th August 1902.
1868 - child was Julio George born NZ 1868 to and died NZ 1944.
Married: Margaret Readie - born Ireland 1872 - died NZ 1942.
Had two sons:
Arthur George 1902-1980 (one daughter Janice 1943 - current)
Tomas George 1905 - 1965 (two children)

Thanks for your message. Love to catch up as also in NZ. Nicolas's death certificate stated born in Egypt, which is hopefully correct. In the old days it seemed you could say anything when it came to government requirements for birth/death certificates etc. Did have a grandmother on a different side of the family who seemed to get younger with every child she had born.

You've made a lot of progress with Nicholas and Mary Ellen George. As Mary Ellen Blackburn was the older sister of my husband's grandfather, I'd love to compare notes, as I've been researching them since the 1980s and have a large family file.
I think the comment that Nicholas' death certificate isn't correct, and his son born in Egypt may have been confused. In his army service record he lists Nicholas' birthplace as Carso, Greece. From a 1916 court case, Nicholas was known in Kaiapoi as the 'old Greek'.
