Are there anywhere I can find or see records for people that were in Asylums or hospitals anywhere. This was in 1941 in the above hospital where she died.

The National Archives is the place to find out who holds these type of records.

Hospital records are normally closed for a period of 100 years :-\
My aunt was Matron of Oakwood in the 1960's - but I have no records of her time there.

It really is frustrating not being able to find details or records!

I was able to view the records of my relative who died in 1942 at Canterbury asylum hospital. I had to prove his death and as long as his records were separate from other patients I could view them. Made very sad but interesting reading.

How would I go about doing that Panda?

At that time they were held at the archives. You would need to contact Kent archives to see if they have the records you are after if not where they are now stored. Once located you would need to ask what requirements they have for you to view them.
Each place is different and they also change the requirements to view records but there is no harm in asking.
