I am trying to find Adam Smith and family prior to 1881 census his wife is Jane (Jenty) Daughter Emily, his father may be Adam also, he resided in the Chertsey, Surrey area in 1881, 1891, 1901.

Later census gives place of birth as Henley on Thames (ADDED also Wolvercote). It helps us if you give more information from the census that you have including references.
Where and when did he marry and what information is given on the certificate

Yes, Henley on Thames is correct, 1891 piece 552 Folio 112, 1901, piece 592 folio 44 page 32. 1881 piece 783 folio 17 page 28.

This might explain why he was not on earlier census returns?
No trace of marriage: Adam died 1906 age given as 68.
Is this Jane I wonder Gantilla Smith born about 1832 died Apr 1906 Chertsey, Surrey

As far as I can see the baptism records for Adam was the only one for Adam & Emma and the same for Genty/Jane. Note they might have been born earlier than the baptism date.

If you go onto the GRO site, there are quite a lot of SMITH/JEFFS births 1844 +/- 10, I suspect there could be at least two families. You'll need to spend some time listing and unravelling them.

I've found Thomas on 1871 with children Mary Ann, Henry and Abnead b c1865 "in a field" in Winkfield. Born Frimley, Farnham, Chertsey and Winkfield respectively. Thomas says he's still married

I suspect Adam may have a similar background. Have you tried the travelling people board here - there's quite a lot of information been collated of the various families which may be of help
