Title: Yeast Merchant - brewer

Could anyone give me a precise detailed account of what a Yeast Merchant - Brewer did in England in t he 1700s ?
Would he work for himself, work for others, have others employed etc.?
Would he be considered a tradesman, lower class worker or ?
Any information of this occupation would be greatly appreciated. Thank you

I believe most bakers of the Georgians would be using buckets of brewers yeast- the froth off the fermenting beer- so I would guess that he's brewing something akin to beer to maximise the yeast production.
Other examples of yeast merchants I've seen in census returns have them as self employed and usually employing a couple of men.
I would imagine he's be seen as a tradesman
