Hi, im wondering if someone can decipher the first name of the Fathers name listed at the top?

Thought perhaps Santo but then noticed the "S" in his occupation.  So back to the drawing board!

Well I am back to thinking it is in fact Santo.

The "S" resembles that at the end of the word Counties.

Could well be. There is a faint mark for the downstroke . Santo is definitely and Italian male name.   One of the Versace family was named Santo.

Alternatively, it could be a poorly formed 'J', making the name Janto?

Janto is also an Italian name.

It's Santo, a very common Italian male name, meaning "saint".  It's the only possibility because the Italians use the same first names over and over and don't have any unique ones.

I've never seen the name "Janto" among the Italians--especially since the Italians don't use the letter "j" in their writing.
