That's a big gap between marriage and first known kids.

The 1777 marriage was by Banns (and you got the record fro the BTs?)

Did you find the parish copy and the Banns to see if it mentions where the bride & groom were resident?

It's a biggish gap, but not impossible. Today one would say the parents decided to establish their careers before having children, but that would hardly apply in the 18th century. However, there are other reasons why it might take a long time. My own parents were married in 1934, but didn't have their first child (my sister) until 1941.

You also need to look at non-anglican church(es) for baptisms and burials.
Which records have been checked?

Devon FHS has the Culmstock registers online.

The couple in 1777 were both OTP and James was a widower.

Banns between James Stark and Alice Potter (bOTP) were read in April 1763, but no marriage is recorded.
James Stark and Joan Tricky (bOTP) were married in May 1765.
At both weddings the couple marked. The two James's marks are not very similar but it could be he changed his mark over time. (In 1763 it's bit like a "2", in 1777 a "3".)

James Starke and Alice Potter were married by banns at Exeter St Sidwell in May 1763, both OTP. This time the mark was a cross.

So  not very clear how many James Starks there were in Culmstock at the time.

(I haven't looked at the baptisms and burials.)

James Stark and Joan Tricky (bOTP) were married in May 1765.

The burials for this couple appear in Culmstock non conformist records on FindMyPast
James died 1817 age 84
Joan died 1820 age 85

There is a burial for a Patience Stark of Westleigh in Burlescombe 28 December 1834 age 79
