It may be that I've been looking too long, but:
William Patterson, aged 29y a labourer, Father William Patterson a labourer
Sarah Brown aged 25y (aged 14y @ 1851 census, no 1841/ baptism found* ), father David Brown a Painter. Witnessed by bride's (sister and her husband) (Esther & Henry Taylor)
*Unless in 1841 Woolwich she is also Betsy Morris, the 4-y-old child of unwed aunt Betsy Morris.

Marriage in 1863 gives birth years around 1833 and 1837.

She's very variable on age, but she was claiming
24y 25y at 1863, which is an implied 1838ish birth.

The birth date from baptism for William John Patterson corresponds exactly to the birth date at death in USA.
The birth date from baptism of Robert David Patterson is one day different to the birth date at death in USA.
Why should that be a maybe?
Sorry, marriage was in December so claiming age 25 would imply more likely to be born in 1838.
Previously you had said the censuses made them too young, the 1900 looks pretty good for ages.

I've not had a subscription recently, so It's all been bookmarked for later review.
But yes, while some census records the adult ages as a bit young, there are other records which correlate with the UK records far better.
I have added them, and will consolidate with references/sources when i have a sub again.
