Looking for John Craig born Gibraltar approx 1837. Brother: James also born Gibraltar. Father: Thomas Craig who was a Sergeant in the Royal Artillery, Gibraltar. John married Catherine Foster 1861 parish of Monkstown, Dublin, Ireland.

John and James birth records are recorded at the GRO under this heading:-
Gro Regimental Birth Indices Supplement (1761 To 1924)
John Craig 1838, Volume R.A.24, Page 84
James Craig 1841, Volume R.A.24, Page 106
If you wish to you can order them from the GRO but you would need to register first. Click on ordering a birth certificate then find the one for overseas. Fill in the details as requested.
Or you may be able to find baptism records for them, on Ancestry perhaps.

FamilySearch has 7 entries for Craig born in Gibraltar - but nothing helpful for John. They are:
James CRAIG born c1841: 1871 census Everton Lancashire, furniture broker, wife Dorothy and three children; also 1901 Census Liverpool Lancashire, furniture dealer, father-in-law to William GUY
Thomas Henry CRAIG born c1836: Chelsea Pensioner (Gunner)
Nathaniel CRAIG born c1850: 1851 Census Hampshire with mother Mary (soldier's wife born Waterford)
Thomas CRAIG born c1847: 1851 Census Guernsey, son of William (soldier) and Margaret.
Rebecca CRAIG born 1883: immigration, Vermont 1924
James looks to be a good match for your John's brother.
Thomas Henry might be another sibling.
Nathaniel might be another sibling.
Thomas and Rebecca are probably not relevant to your search.
So, - no sign of your John on a census on FamilySearch. The hunt goes on!

James's father Thomas occ. as labourer, then back to Ireland

There's a probate record for James, he died 8 Jan 1914, the address matches 1911 for them

Thanks for the reply for Thomas Craig's probate. What is the best way to find out if John and James mother was Jane as in the probate for Thomas Craig. It stated that Thomas Craig died from heart disease which runs in my dad's side of the family, so we could have the right person. My dad turned 92 this month and has now gone into a rest home so I am trying very hard to finish this tree.

The NZ death certificate for John might have her name (Jane) if the informants knew it, and since they knew the rest as per obit they very well might.
Order the printout. Cheaper and is a direct copy so contains all the info, sent by email as a PDF. Usually within 2 or 3 days.
