Europe / Holstein records again

I am visiting Germany soon & planned to at least go to "Ellerbach" or Ellerbek (as it seems to be now} although I have not found any records for Nicolaus Gunther.

I have found two Ellerbeks - one near Hamburg and one near Keil.  Both would have been in Holstein in 1850 so I am no further advanced.  Any ideas on getting more info very welcome.

Name: Nicolaus Gunther (also Guenther)
DOB: 3 Feb 1831
Place: Ellerbach, (also Ellerbek) Holstein, Germany
Emigrated on "Suzanne". Left Hamburg 1 July 1851. Arrived Adelaide 7 Oct 1851.

I need help to find German records if any exist.

The Ellerbek sounds a possibility.  His name is also on list of emigrants from Schleswig-Holstein so this could be right.

I have my an ancestor's Australian Naturalisation Certificate from 1875
 
Name is Nicolaus Gunther.

His place of birth was given as "Ellerbach' Holstein".  I have used Google Earth & maps but can find no such place there now. 
  Any ideas welcomed.

Carl Ehrenfreid Forster left Hamburg with wife & 5 children on the "Alfred" 20 Aug 1848.  Arrived Port Adelaide 6 Dec 1848.  The family was said to have come from Silesia, Prussia.  They came with a group of Jesuits although in Australia they always used protestant churches or ministers for marriages.
Records in South Australia of marriages of 5 females who give his name as father (the least is a 'Charles') give names as
Maria Anna Christina Foerster, DOB abt 1826,
Anna Augusta Louisa Foerster, DOB abt 1830
Mathilda Paulina Louise Foerster, DOB abt 1834
Selina Foerster, DOB 29 Jan 1837
Louisa Pauline Matilda Foerster, DOB abt 1838
Foerster has been spelled as Furster, Forster, Forrester, & Foster in Australian records.  I do not know where they came from.  Any suggestions?
