Cork / Irish roots (Canada)

I am starting in County Cork because my sister has a vague memory of our grandmother mentioning it.  Our Collier and Carbery ancestors came to Ontario, Canada, probably in the early 1830's.

I have exhausted all Canadian information I can find.  I am hoping to eventually find some Ships' Lists that will help me.  My question is, if my Colliers and Carberys were listed here in Ontario censuses as "Church of England", is there a likely area of Ireland they would have been from?

My grandfather John Rewers was a merchant seaman in London in 1891.  Can you find him for me in the Poplar area?  Perhaps because he was at sea a lot he might not have been counted.  He married in Aug. of 1891.  His wife Charlotte Liston was at 134 Teviot St. at the time of census, waitress, inn aged 28.

Trying to find a marriage between John Gustav Rewers and Clara ?.  He married Charlotte Liston in 1891; my grandfather and a sister who lived only a year born 1892 and 1895.  Charlotte passed away aged 41 yrs. in 1905.  Clara had known her.  (I was originally told she was a sister).  So marriage 1906 or a little later.  The Rewers family emigrated to Ontario Canada before 1910.
Would appreciate any help with marriage lookup and finding last name of Clara.

Every little helps a lot, Meliora, thanks.  I have marriage date as Aug. 23, 1891.  This is a branch that I have had some difficulty following ... poor Charlotte's grave has even been moved for city development.  Jon Rewers name was Trolle, I have already once asked if anyone knew why, if immigrants often did so, and recently my auntie told me it was just because he was estranged from his family in Sweden.  The "upper crust" I am told, but apparently the Rewers were extremely poor in England.  Charlotte was described as "sickly." 
Little Eleanor Alice was born c 1895, died 1896.  Would appreciate more accurate dates if you can find them.

Charlotte's brother John (thanks, EC) was aged 31 London Blackwall.  Does anyone have an accurate listing to see if he had a family?  b. London Blackwall, St. Pancras, ... Maker.  I am wondering if he is a watchmaker, as there is a William aged 35, perhaps an uncle?

I have also found a VICTOR Liston (perhaps connected to my grandfather John Victor Rewers) listed as a boarder in 1881 census, aged 40, b. Middlesex, "vocal comedian (actor)", I am thinking perhaps this is Charlotte and John's father but not sure how to trace anything further ...

My g grandmother Charlotte Liston married Jon Rewers (he was from Sweden, changed his name from Trolle) in 1890 or so.  My grandfather John Rewers born 1892 I believe. 

I need two pieces of information if anyone can help.  Firstly, I can find no other relatives of Charlotte Liston.   (In 1901 census Charlotte shown as "CHARLES" Rewers).  Can anyone else find anything on her and/or her family in earlier census?

Charlotte passed away aged 41 in 1905.  Jon Rewers then married a woman named Clara ?.  Can anyone find this marriage record.  Any assistance much appreciated.

Just had another thought ... and since my auntie has recently passed away, I know she won't mind ... her name was Edith, but we always called her Auntie Ninks.
Apparently it began when she was in diapers (nappies) and they called her "Stinky", she started at that time to call herself "Ninks"!  And we still called her that till she passed away at aged 81.
