Age?
Place of birth?
Married or not?
There a fair few David Jones in Gelligaer and you can't search by occupation on Ancestry in 1891. I've had a look at the entries for that name as a lodger and haven't spotted him yet .Someone with the census on disc might have more luck.

Do you have the birth certificate for any of the children to give mother's maiden name? This looks like Theophilus
Theophilus Evans june qtr 1888 Merthyr Tydfil vol 11a pg 520

Given the birth place of the first 3 children, this might be the marriage
Thomas Evans dec qtr 1881 Bedwelty vol 11a pg 173 with Margaret Davies on the same page
