You need to first go to the single database you want to search.

So for example,  select "Search">"Card Catalogue" from the menu at the top,  then search for 1901 Census and select the 1901 Census.  When the search appears you will have the option to Search by a variety of fields, as long as you have "Advanced Search" on (the default I think if you go in by Card Catalogue).

On the Find My Past my record screen you can add a tag which shows in the My Records Page, just click  the edit icon and add a tag eg or saved, allocated etc and you can see this on the My records page.

With Family Historian you can chart any selected people, assuming you have a method of identifying the people you want to include you can make a standard chart and then Mark the boxes you don't want either manually or using a query and then hide the boxes, the only limitation is if you hide both parents any children will be hidden, but you can add an additional diagram to your chart to handle this.

Family Historian does work with GEDCOM files, as it always has.  The new project folder just "wrappers" the GEDCOM with the media to make it easier for "newbies" to store all their data together.

The other program you might have been thinking of is GEDCOM Census which works with Family Historian to enter Census information,  you can find more on both at http://www.fhug.org.uk

Just noticed your posts.   Edward Taubman is my Husbands Great x2 Grandfather.
