Hi, that's great that you have that description - puts a bit of flesh on the bones!
Records are going to be difficult with it being so early but I have found these for you to look at :
http://www.failteromhat.com
If you look for Griffiths Valuation (around the 1850s) there are lots of Fahys (no 'e') for Kinvarradoorus parish but only 1 entry for a fahy in Kinvarra - Thomas Fahy. there are other Faheys (with 'e') but not Kinvarra I think.
When I 'googled' Fahy/Kinvarra I found a record of Kinvara Remembrance Masses - often said at death anniversaries etc- and there is a Darby Fahy for 1834. Possibly a relative of your Darby. You can see this at:
http://archiver.rootsweb.com/th/read/IRL-GALWAY/2003-09/1063843127
There is an email address for the subscriber - albeit 2003 and a link there to
http://www.celticcousins.net/ireland/kinvara.htm
which shows residents in Kinvara in 1834 when Darby would be there presumably.
I do hope you find something
Best wishes
Heywood
