I'm getting nowhere
I'm inclined towards the Charles and Mary couple in Droumdrastil as yours but purely on the thin grounds that they appear to be better off than the Charles and Sarah Pookeen couple. My thinking is Charles would need a few connections to become a Land Stewart.

Assuming your Charles is one of the two born 1871 I just can't find where the other went, the army is a possibility but I don't have the subscriptions necessary to make that search, the other is emigration, given that I haven't found a death for him.
