I've seen wild age discrepancies (5-10 years) and several incorrect birthdates in the census records.

The key now would be to find the family or families in 1891. 

Also, if you have an LDS family history centre near you, I wonder if they have Methodist marriage and baptismal records from Quebec on microfilm.

Do a search on George Moore.

Hmmmmmm...one has to be openminded about census data....Sometimes the only thing right about them is the names...and even then...
but a year or two is nothing compared to some...I think people thew out dates and random details without taking it seriously, and likewise for the enumerators...

So what are you saying you know for sure, then, that they were born in Nova Scotia?  Always good to be skeptical, but not to rule out completely as this George in '81 looks feasible...

Maybe there were 2 George Moores running around Quebec but don't eliminate the possibility that the one in 1881 is the same one as the one in 1901.
George's birthplace in 1881 could be an error- maybe is several of the children were born in N.B. his place of birth got put down as N.B. also.
Frank's age: 1901-1877, age in 1881 is c1878.
1881- 3rd child was Mary Isabella.
Irish vs. British: at that time Ireland was part of Britain. In 1881 George could have said his family were Irish. Especially in Ulster where people with Scottish ancestors would have called themselves Scottish or Ulster Scots. If the family were Methodist in Ireland they might have been of English descent. In the 1881 Canadian census I have relatives who gave their origin as Scottish, Irish and English (same family).
Do you know what religion the George Moore in 1901 was?
Quebec is one place that worries me when it comes to the census- imagine a French-speaking enumerator asking a non-French speaker the questions.
Away sorting out DNA matches... I may be gone for some time many years!

What's the address for the George Moore you found in the 1879-1880 Lovell's Directory of Montreal?

What years have you checked and when/where have you found him?

LDS site comes up with slightly different marriage: George Moore m.8 Mar.1871 Kings Co., N.B. to Isabella Chapman.

1881 & 1901- George Moore?
tinsmith, Methodist, son Frank c1877/8...still possible.

The record I found was for a Marriage Bond; a promise only.  It wouldn't give the parents' names or much detail at all.

If China finds more info (for example, the 1891 census, George Moore's death record, a birth record for one of the children showing Isabella's maiden name, etc.), and it lines up, she can order the marriage record.  How cool is that?
